We do everything we can to produce a high-quality product which will satisfy even our most demanding customers: selected meats, natural casings, coarse mincing and a slow ageing process in the Gelon valley in La Rochette. Our extra-lean salami are prepared only from naturally lean meats and choicest pork cuts via a traditional production process, WITHOUT
FAT ADDITION. Our salami contains only 12% fat. The association of lean meat and a subtle mixture of spices allow our extra-lean dry sausages to develop all the flavours that have made their success - our dry sausage has won several gold medals
